Every time we go to France, we see many variations of carrot salad in every grocery store and we've tried all of them. This recipe is I think the most simple of all of those variations. It is very easy and it takes only a few ingredients. Make a big batch of this and enjoy it on the side of pizza, a sandwich, or really with anything. We even add it on top of our green salads. Also, if there is any leftover it's even better the next day. Let's make it!
Step by Step Recipe Instruction Video:
Ingredients:
- 2.5 lbs (700g) of carrots
- 2 tbsp Dijon mustard
- 2 tbsp olive oil
- 1 lemon
- 1 tsp mixed Provence herbs
- 1 tsp salt
Steps to make it:
- Peel and shred the carrots. You can either use a food processor or a mandolin.
- Next, mix together the rest of the ingredients to make the dressing.
- Mix the dressing well into the shredded carrots.
- I prefer to leave it in the refrigerator for about 20 minutes so it is nicely marinated.
Pairs well with pizza, sandwiches, hotdogs, grilled meat, fish, rice, and pasta.
