There’s something timeless about a slice of quiche. Imagine the kitchens of medieval Europe, where bakers first poured a simple custard of eggs and cream into a rustic bread crust. In the German region of Lothringen—later claimed by France and renamed Lorraine—this humble dish became the famous Quiche Lorraine, filled with smoky bacon and baked until golden. Over the centuries, quiche traveled beyond France, adapting to whatever ingredients were on hand: fresh garden vegetables, melting cheeses, even seafood. Today, it’s a dish that feels at home on any table—whether it’s the centerpiece of a weekend brunch or a quick dinner pulled from the fridge.
When dinner feels like a question mark, this quick and easy quiche is always the answer. It’s one of those wonderfully flexible dishes you can make your own—toss in mushrooms, a bit of ham, or whatever veggies you have on hand, and it always works. In our house, quiche has become the go-to whenever we’re out of ideas. My husband, who picked up the recipe from his father, even taught me how to whip up a simple homemade crust—so now quiche makes a regular appearance on our table.
You can also use a pre-made store-bought crust. If you don't have one and want to save time, see Easy and Versatile Everyday Quiche Dough for an easier version of the crust dough.

Making the crust dough
Ingredients for the Crust:
- 1 ½ cups (200 gr) of all-purpose flour
- ½ teaspoon salt
- ½ cup (110 gr) of unsalted butter, cold and diced
- 3-4 tablespoons ice water
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the flour and salt for the crust. Add the cold, diced butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Press the dough into the dish and trim any excess edges.
Making the filling
Ingredients for the Filling:
- 1 cup (240 ml) milk
- 4 large eggs
- 1 cup (120 gr) of shredded cheese (Gruyère or Swiss works well)
- ½ cup (115 gr) of cooked and crumbled bacon or ham
- ½ cup (80 gr) chopped vegetables (spinach, mushrooms, bell peppers, etc.)
- Salt and pepper to taste
- In a separate bowl, whisk together the eggs and milk until well combined.
- Season with salt and pepper.
- Sprinkle half of the shredded cheese onto the bottom of the pie crust. Add the cooked bacon or ham, followed by the chopped vegetables.
- Pour the egg mixture over the filling.
- Sprinkle the remaining cheese on top of the quiche.
Baking it all
- Place the quiche on a baking sheet and bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is set.
- Remove the quiche from the oven and let it cool for a few minutes before slicing and serving.
