Mustard Pie

A delicious, quick and easy recipe that is way better than pizza!

This is a family recipe that my mother used to make, her own version of this classic French dish.

Tarte à la moutarde is a classic French dish that is delicious and easy to make. It is eaten mostly in summer when tomatoes are in season and can be easily packed for a picnic.

Note that the quality of the ingredients will affect the savoriness of the dish; we highly recommend using quality Herbs de Provence, Dijon mustard, and olive oil.



 Step by Step Recipe Instruction Video:


 Ingredients:

  • 1 large ripe tomato (or 2 or 3 small ones)
  • 2 tbsp of Dijon mustard
  • 2 tbsp of herbes de Provence
  • 5 oz (150 grams) of Swiss or Compté cheese, shredded
  • Black pepper to taste

Steps:

Flatten the dough and spread it evenly into a 12-inch pie pan, making sure to raise the sides enough to prevent the juice from the tomatoes from dripping under the crust.

Spread the Dijon mustard evenly onto the crust, spread the grated cheese evenly, slice the tomatoes thinly, and place them on top of the cheese, covering the entire surface of the pie. The cheese will melt and prevent the tomato juice from soaking the crust too much during baking.

Sprinkle some Herbes de Provence on the pie and add some crushed black pepper.

Preheat the oven to 450° Fahrenheit (230° Celsius) and bake for about 10 minutes, then lower to 400° Fahrenheit (200° Celsius) for another 20 minutes or until the crust is cooked throughout. Enjoy with a side of fresh salad!
