Spicy Cheddar Cheese Gougères
A twist on the traditional French gougères
My husband makes these delicious cheese puffs from time to time and I always wanted to try making them with different cheeses and flavors. So, here is my twist on the traditional gougères with sharp cheddar cheese and chili flakes. If you want to try the original recipe head on to the pages titled Gougères under recipes.

Gougères are cheesy puffs made from choux pastry. The choux base is quick and easy to whip up, and the gougères bake up golden and crisp.

In this recipe, I used sharp cheddar cheese and 1 tablespoon of chili flakes. If you don't like spicy food too much then try 1/2 tablespoon of chili flakes or leave it out altogether.
The dough is usually hard to mix when you start adding the eggs one by one because it becomes slippery but you must mix until it has a uniform texture. And, let me tell you it will require some strength so if you have a dough mixer go ahead and just toss it in there or ask your husband to help you if you are weak like me, LOL.

Ingredients:
- 1 cup (240ml) of water
- 1 cup (240ml) of milk
- 6 oz (170 g) of unsalted butter (one and a half stick)
- 1/2 teaspoon of coarse salt
- 1 tablespoon of chili flakes (or less if you don't want it too spicy)
- 2 cups (240 g) of all-purpose flour sifted
- 7 large eggs
- 9 ounces (255 g) of coarsely sharp cheddar cheese
- Freshly ground pepper (adjust to taste)

- In a medium saucepan, combine the water, milk, butter, chili flakes, and salt and bring to a boil.
- Reduce the heat, add the flour all at once and stir it in with a wooden spoon until a smooth dough forms
- Continue stirring on low heat until the batter dries out a bit and pulls away from the pan (about 2 minutes).
- Scrape the batter into a bowl, and let cool for 1 minute.
- Mix the eggs into the batter, 1 at a time, making sure they are thoroughly incorporated into the batter before adding the next one.
- Add the cheese (save some to place on top later) as well as some fresh ground pepper.
- Preheat the oven to 400°F (200°C).
- Line 2 regular-size or 1 large baking sheet with parchment paper.
- Using two spoons, scoop up golfball size batter and build small scoops of batter and place them on a baking sheet, spaced about 1 to 2 inches apart.
- Sprinkle with a little bit of cheese on top.
- Bake for 25 to 30 minutes, or until puffed and golden brown and fill the room with the fragrant aroma of melted cheese.
- Leave them in the cooling oven for another 30 minutes so that they stay crispy on the outside.
