30 Minute Rice Pilaf and Salmon

Baked Salmon and Rice Pilaf

Every time I cook rice in my rice cooker, I know I can make a dish or side dish while the rice is cooking. In my case, my rice cooker cooks 2 cups of rice in about 25 minutes so if dinner involves rice it almost always takes me 30 minutes to make the entire dish. I can bake fish in 30 minutes, make stir-fried meat and veggies, or steamed veggies. The possibilities are endless.

If you can't find fresh herbs, make sure that you use a quality Herbs de Provence mix.



 Ingredients:

  • 2 cups (400 grams) of rice (any white rice, I like to use jasmine)
  • 5 pieces of salmon fillets, each weighing approximately 4 ounces (about 113 grams)
  • 2 tablespoons butter or olive oil
  • 1 small onion, finely chopped
  • 1 sweet bell pepper (any color), finely chopped
  • 2 small zucchini, finely chopped
  • 1 garlic clove, minced
  • 2 cups chicken or vegetable broth or 1 cube chicken bullion and 2 cups of water
  • Black pepper to taste
Optional: additional seasonings like herbs, spices, or dried fruits and nuts
  • 2 tbsp mayonnaise
  • Herb de Provence
  • Parmesan cheese

 Steps to make it:

For the rice:

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. Put rice in the rice cooker add olive oil and mix well.
  3. Add the chopped onion, bell pepper, zucchini, and minced garlic to the pot.
  4. Add the crumbled chicken bullion or broth, season with black pepper, and any additional seasonings you desire.
  5. Close the rice cooker and set it to white rice mode.
  6. Once the rice cooker switches to the "keep warm" setting or the timer goes off, carefully open the rice cooker and fluff the rice with a fork.

For the fish:

While the rice is cooking we will bake the fish.

  1. Preheat oven to 375°F (190°C).
  2. Dry the salmon pieces with a paper towel and place them on a greased aluminum foil with a baking pan underneath.
  3. Spread a thin layer of mayonnaise on the salmon.
  4. Sprinkle herbs
  5. Sprinkle parmesan cheese
  6. Bake for 15 - 20 minutes depending on the thickness of the fillet.
