This is another of my mother's recipes, her family's version of this French classic. Her original version calls for adding some Liqueur de Marc d'Alsace (or Eau de Vie), but these are optional and difficult to find abroad. I hope you enjoy this recipe!

The French Onion Pie combines the heartwarming flavors of a classic French onion soup with the satisfying texture of a pie, making it a unique dish that's perfect for any meal. Step by Step Recipe Instruction Video:
Ingredients:
- 1 kg (about 2.2 lbs) yellow onions, diced
- 15g of lardons
- 3 eggs
- 2 tablespoons of sour cream
- 10g (1 tablespoon) unsalted butter
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 tablespoon all-purpose flour
Steps to make it:
For the crust, see Easy and Versatile Pâté Brisée, or you can also use a premade store-bought dough.
Making the Filling:
- Render the lardons to your liking (or you can also use 2 pieces of bacon, sliced).
- Set aside for now, drain and discard the fat.
- In a large skillet over medium heat, heat the butter.
- Add the diced onions, 1 teaspoon salt, and ½ teaspoon black pepper.
- Add the rendered lardons back into the mix.
- Cook, stirring occasionally, for about 15-20 minutes, or until the onions are deeply caramelized.
- Remove from heat and let cool slightly for a few minutes.
Assembling the Pie:
- Preheat your oven to 230°C (450°F).
- Mix the eggs and the sour cream into the cooled onions.
- Spread the caramelized onion mixture evenly over the crust.
- Bake for 30 minutes, or until the pie is bubbly and golden brown.
- Let the pie cool for a few minutes before slicing.
