Ingredients:
- 1 cup (120g) all-purpose flour
- 1 teaspoon baking soda
- Pinch of salt
- 1 teaspoon ground cinnamon
- 1/2 cup (100ml) vegetable oil
- 1 cup (200g) brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 (170g) cups shredded carrots (about 2-3 medium-sized carrots)
- 1/2 cup (80g) raisins
- 1/2 cup (50g) chopped walnuts

- Preheat your oven to 356°F (180°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
- In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon. Set aside.
- In a separate large mixing bowl, combine the vegetable oil, brown sugar, and vanilla extract. Mix well until the sugar is fully incorporated.
- Add the eggs to the oil and sugar mixture, one at a time, beating well after each addition.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; lumps are fine.
- Fold in the shredded carrots, raisins, and chopped walnuts, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Place the cake pan in the preheated oven and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack to cool completely.
