Ever since I discovered the Corsican traditional cheesecake Fiadone, I've been making my versions of it. I made with chocolate, some savory, and some with fruits, and this one I tried to make keto-friendly.
You can adjust the sweetness according to your taste buds, but I don't like it very sweet, so I made this with only three packets of stevia. You can also substitute the raspberries for other fruits, such as blackberries, blueberries, and strawberries.
Let's make it!
Ingredients:
- 10.5 oz (300 g) goat cheese, at room temperature
- 4 large eggs, at room temperature
- 1 ½ cups (150 g) almond flour
- 2 tsp (10 mL) vanilla extract
- 3 packets Stevia sweetener (≈3 g total, depending on brand)
- 12 oz (340 g) fresh raspberries
- Canned spray oil of your choice
Steps to make it:
Into a mixing bowl, add goat cheese, eggs, stevia, and vanilla extract, then mix until it forms a smooth consistency. Add in the almond flour and mix well. Add the raspberries to the batter and mix them gently, being careful not to break them.
Line cupcake baking pans with cupcake paper cups and spray them with a little bit of oil.
Put about 1/2 cup of goat cheese batter into the cups. It should barely fill up to the rim of the paper cups.
Bake at 350°F (177°C) for 15 - 20 minutes, or until the top cracks and turns slightly golden brown.
Let it cool and enjoy!
