Rosemary Beef with Mushrooms, Garlic, Herbs, and Asparagus

This is an easy recipe that you can make at any time. We are lucky enough to have some fresh rosemary in the garden, which really makes a difference in the flavor of the dish. If you can't find fresh rosemary, or even if you do but want to bring additional flavors, you can also use a quality Herbs de Provence.

 Step by Step Recipe Instruction Video:


 Ingredients:

  • 1 lb (450 g) beef sirloin or tenderloin, thinly sliced
  • 8 oz (225 g) mushrooms, sliced
  • 3 or 4 cloves of garlic, minced
  • 2 onions, cut into strips
  • 1 bunch of asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

 Steps to make it:

Instructions:

  1. Heat 1 tablespoon of olive oil in a large skillet or frying pan over medium-high heat.
  2. Season the beef slices with salt, pepper, and half of the chopped rosemary. Add the beef to the skillet and cook for 2-3 minutes per side until browned. Remove the beef from the skillet and set it aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and the onions and cook until they release their moisture and start to brown, about 5 minutes.
  4. Add the minced garlic, remaining rosemary, and thyme to the skillet. Cook for another minute until the herbs are fragrant.
  5. Return the beef to the skillet and toss it with the mushrooms, garlic, and herbs. Cook for an additional 2 minutes to allow the flavors to meld together.
  6. Meanwhile, steam the asparagus tips until they are tender-crisp, about 2-3 minutes.
  7. Serve the rosemary beef mixture over a bed of steamed asparagus tips.
  8. Enjoy your delicious rosemary beef with mushrooms, garlic, herbs, and asparagus tips!

Note: You can serve this dish with rice, mashed potatoes, or crusty bread to make it a more substantial meal. Feel free to adjust the seasoning and herbs according to your taste preferences.
