This is an easy recipe that you can make at any time. We are lucky enough to have some fresh rosemary in the garden, which really makes a difference in the flavor of the dish. If you can't find fresh rosemary, or even if you do but want to bring additional flavors, you can also use a quality Herbs de Provence.
Last time, we made it with a side of Oven Roasted Baby Potatoes with Herbs.
Step by Step Recipe Instruction Video:
Ingredients:
- 1 lb (450 g) beef sirloin or tenderloin, thinly sliced
- 8 oz (225 g) mushrooms, sliced
- 3 or 4 cloves of garlic, minced
- 2 onions, cut into strips
- 1 bunch of asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Steps to make it:
Instructions:
- Heat 1 tablespoon of olive oil in a large skillet or frying pan over medium-high heat.
- Season the beef slices with salt, pepper, and half of the chopped rosemary. Add the beef to the skillet and cook for 2-3 minutes per side until browned. Remove the beef from the skillet and set it aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and the onions and cook until they release their moisture and start to brown, about 5 minutes.
- Add the minced garlic, remaining rosemary, and thyme to the skillet. Cook for another minute until the herbs are fragrant.
- Return the beef to the skillet and toss it with the mushrooms, garlic, and herbs. Cook for an additional 2 minutes to allow the flavors to meld together.
- Meanwhile, steam the asparagus tips until they are tender-crisp, about 2-3 minutes.
- Serve the rosemary beef mixture over a bed of steamed asparagus tips.

Note: You can serve this dish with rice, mashed potatoes, or crusty bread to make it a more substantial meal. Feel free to adjust the seasoning and herbs according to your taste preferences.
