 Step by Step Recipe Instruction Video:


 Ingredients:

  • 7 pieces of chicken thighs
  • 2-3 cups (280g) sliced white mushrooms
  • 1 medium onion diced
  • 10 cloves of garlic
  • 1 lemon sliced
  • 2 tbsp Herbes de Provence
  • 2 tbsp olive oil
  • Salt and pepper to taste

 Steps to make it:

  1. Heat the cast iron pan and season with olive oil.
  2. Dust the chicken thighs with flour and arrange them in the hot pan searing each side for 3 minutes or until golden brown.
  3. Remove chicken thighs from the pan and put them into a small bowl.
  4. Add more olive oil to the pan and sauté onions for 1 minute while stirring.
  5. Add garlic and sauté for another minute.
  6. Add mushroom, herbs, salt, and pepper and sautéed for about 2-3 minutes while stirring.
  7. Arrange the chicken thighs back into the pan making sure the chicken thighs are touching the bottom of the pan and covered with the rest of the ingredients.
  8. Add the chicken broth that was accumulated in the bowl (if there are some) along with another cup of water.
  9. Cover and simmer for 20 minutes.

Pairs incredibly well with a French Rosé, Chardonnay, or Sauvignon Blanc. Also goes great with a with rustic French bread to pick up all the yummy broth from your plate.
