Step by Step Recipe Instruction Video:
Ingredients:
- 7 pieces of chicken thighs
- 2-3 cups (280g) sliced white mushrooms
- 1 medium onion diced
- 10 cloves of garlic
- 1 lemon sliced
- 2 tbsp Herbes de Provence
- 2 tbsp olive oil
- Salt and pepper to taste
Steps to make it:
- Heat the cast iron pan and season with olive oil.
- Dust the chicken thighs with flour and arrange them in the hot pan searing each side for 3 minutes or until golden brown.
- Remove chicken thighs from the pan and put them into a small bowl.
- Add more olive oil to the pan and sauté onions for 1 minute while stirring.
- Add garlic and sauté for another minute.
- Add mushroom, herbs, salt, and pepper and sautéed for about 2-3 minutes while stirring.
- Arrange the chicken thighs back into the pan making sure the chicken thighs are touching the bottom of the pan and covered with the rest of the ingredients.
- Add the chicken broth that was accumulated in the bowl (if there are some) along with another cup of water.
- Cover and simmer for 20 minutes.
Pairs incredibly well with a French Rosé, Chardonnay, or Sauvignon Blanc. Also goes great with a with rustic French bread to pick up all the yummy broth from your plate.
