Pumpkin and Lentil Soup with Italian Sausage

Every fall season we buy at least a few of those cute little pumpkins to decorate the kitchen counter. Then I use them up one by one in some kind of soup or roasted veggie mix since we are not very big into pumpkin pie. Here is one of those soups that I make, it is a family-approved recipe and super easy to make.

You can use Italian sausage without casing if you prefer. I used the one with the casing and squeezed it out of the casing little by little to make small meatball-like shapes.

Since the Italian sausage is seasoned with salt I only add a couple of pinches of salt to the soup at the end if needed.



 Ingredients:

  • 1 pack (500 g) Mild Italian sausage
  • 1 small sugar pie pumpkin
  • 1 cup (75g) of lentils
  • 1 medium onion
  • 3 tomatoes
  • 4 medium yellow potatoes
  • 3 cloves garlic
  • 1/2 tbsp herb de Provence
  • salt and pepper to your liking

  • Start by sauteing chopped onions and garlic.
  • Add tomato paste and herb de Provence, and stir.
  • Then add chopped tomatoes and mix well. Cook for a few minutes while stirring occasionally so it doesn't stick to the bottom as much.
  • Add 4 cups (950 ml) of water and let it boil.
  • Once it's boiled add washed lentils, chopped pumpkin, and chopped potatoes, and mix it well.
  • Push out the Italian sausage from the casing in small pieces to almost look like small meatballs while adding them to the boiling soup.
  • Boil the soup on medium heat until lentils are cooked through.
  • Lentils will cook for about 20 minutes.
  • If the soup thickens up too much to your liking, add another cup (235ml) of water.

That's it. You can serve it in a bowl with nice crusty oven-toasted bread on the side.
