A few years back, I was staying at my in-laws near Saint-Florent, Corsica in August and their trees were loaded with fresh and delicious figs. I was wondering what to make with them and came up with this particular recipe, which was an instant hit with the entire family. I used various inspirations for this recipe, among others the delicious Maui sweet onions.

I like to make my own pizza dough (I'll cover this in a separate video at a later time), but you can buy premade dough too.

You can substitute dried figs if you can't find fresh ones, they are equally tasty but a bit sweeter. Notice that I don't use pizza sauce as a base, get good-quality red onions and balsamic vinegar to cover the dough. I used Roquefort in this recipe but any blue cheese should work just fine. You can also top the pizza with flavorful grated cheese such as Compté or Emmental for extra flavor and cheesy goodness.

 Ingredients:

  • 1 pre-made pizza dough (or homemade)
  • 6-8 fresh figs, sliced
  • 100g blue cheese, crumbled
  • 2 red onions, thinly sliced
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and black pepper to taste

Preheat and Prep:

- Preheat your oven to the temperature recommended on the pizza dough package or to 425°F (220°C).

- Roll out the pizza dough on a floured surface to your desired thickness.

Caramelize the Onions:

- In a large skillet, heat the olive oil and butter over medium-low heat.

- Add the thinly sliced red onions and cook slowly, stirring occasionally, until they begin to caramelize and turn golden brown. This should take about 20-25 minutes.

- Stir and continue cooking for another 5 minutes until the onions are richly caramelized.

- Deglaze the skillet with balsamic vinegar, stirring to incorporate the flavors. Remove from heat and set aside.

Assemble the Pizza:

- Place the rolled-out pizza dough on a baking sheet or pizza stone.

- Evenly spread the caramelized red onions over the dough.

- Distribute the crumbled blue cheese over the onions.

- Arrange the sliced figs on top of the cheese.

Bake to Perfection:

- Slide the pizza into the preheated oven and bake according to the dough's instructions or until the crust is golden and the cheese has melted and slightly bubbled, usually about 12-15 minutes.

Finish and Serve:

- Once out of the oven, drizzle the pizza with additional balsamic glaze.

- Sprinkle fresh thyme leaves over the top for a fragrant finish.

- Add a dash of freshly ground black pepper and a pinch of salt to enhance the flavors.

Slice and Enjoy:

- Carefully slice the Fig and Blue Cheese Pizza into wedges.

- Serve hot and revel in the delightful combination of flavors and textures.
