It all began on a sun-drenched afternoon in the small port town of Nafplio, Greece. I was traveling solo, wandering through narrow cobblestone alleys lined with blooming bougainvillea, when I stumbled upon a family-run taverna. The aroma of sizzling herbs and garlic drifted into the street and pulled me in.
There, I tasted a plate that felt like summer on a fork—herbed chicken grilled over open flame, served with cool, garlicky tzatziki, a hearty spoonful of pilaf, and a salad bursting with tomatoes, cucumbers, and olives. It wasn’t flashy. It was real. Humble ingredients, full of soul.
This recipe is my way of bottling up that memory and bringing it home. I’ve recreated it dozens of times since—sometimes for friends, sometimes just for myself—and every bite reminds me to slow down and savor the moment.
Ingredients:
- 2 boneless skinless chicken breasts (butterflied or pounded thin)
- 30 mL / 2 tbsp olive oil (for chicken marinade)
- 30 mL / 2 tbsp lemon juice (juice of 1 lemon)
- 2 garlic cloves (minced, for chicken)
- 2 g / 1 tsp paprika
- 1 g / 1 tsp dried oregano
- 1 g / 1 tsp dried thyme
- 1 g / ½ tsp ground cumin
- Salt and pepper to taste (used throughout)
- 240 g / 1 cup Greek yogurt
- ½ cucumber (grated and squeezed, for tzatziki)
- 1 garlic clove (minced, for tzatziki)
- 15 mL / 1 tbsp olive oil (for tzatziki)
- 5 mL / 1 tsp lemon juice (for tzatziki)
- 1 g / 1 tsp chopped fresh dill or mint
- 180 g / 1 cup bulgur wheat
- 360 mL / 1½ cups hot chicken or vegetable broth
- ½ small onion (finely chopped)
- ½ green bell pepper (chopped)
- 15 mL / 1 tbsp olive oil (for pilaf)
- 165 g / 1 cup canned chickpeas (rinsed and drained)
- ½ cucumber (chopped, for salad)
- 1 small tomato (chopped)
- 40 g / ¼ cup green olives
- 30 g / ¼ cup red bell pepper (optional)
- 15 mL / 1 tbsp olive oil (for salad)
- 5 mL / 1 tsp red wine vinegar or lemon juice (for salad)
Steps to make it:

1. Grilled Mediterranean Chicken
Ingredients:
- 2 boneless skinless chicken breasts (butterflied or pounded thin)
- 2 tbsp / 30 mL olive oil
- Juice of 1 lemon (approx. 2 tbsp / 30 mL)
- 2 garlic cloves (minced)
- 1 tsp / 2 g paprika
- 1 tsp / 1 g dried oregano
- 1 tsp / 1 g dried thyme
- ½ tsp / 1 g ground cumin
- Salt and pepper to taste
Instructions:
- Mix all ingredients in a bowl and marinate the chicken for at least 1 hour.
- Grill or pan-sear on medium-high heat for 4–5 minutes per side or until cooked through and lightly charred.
2. Tzatziki Sauce
Ingredients:
- 1 cup / 240 g Greek yogurt
- ½ cucumber (grated and squeezed to remove excess water)
- 1 garlic clove (minced)
- 1 tbsp / 15 mL olive oil
- 1 tsp / 5 mL lemon juice
- 1 tsp / 1 g chopped fresh dill or mint
- Salt to taste
Instructions:
- Mix all ingredients in a bowl until smooth.
- Chill for 30 minutes before serving.
3. Bulgur Pilaf with Peppers and Onion
Ingredients:
- 1 cup / 180 g bulgur wheat
- 1½ cups / 360 mL hot chicken or vegetable broth
- ½ small onion (finely chopped)
- ½ green bell pepper (chopped)
- 1 tbsp / 15 mL olive oil
- Salt and pepper to taste
Instructions:
- Sauté onion and bell pepper in olive oil until soft.
- Stir in bulgur and seasoning, then pour in broth.
- Cover and simmer on low for 12–15 minutes, or until bulgur is tender.
4. Mediterranean Chickpea Salad
Ingredients:
- 1 cup / 165 g canned chickpeas (rinsed and drained)
- ½ cucumber (chopped)
- 1 small tomato (chopped)
- ¼ cup / 40 g green olives
- ¼ cup / 30 g red bell pepper (optional)
- 1 tbsp / 15 mL olive oil
- 1 tsp / 5 mL red wine vinegar or lemon juice
- Salt and pepper to taste
Instructions:
- Combine all ingredients in a bowl and toss well.
- Let it sit for 10–15 minutes before serving.
To Plate:
- Spoon some bulgur pilaf onto the plate.
- Add a portion of grilled chicken beside it.
- Place a scoop of tzatziki on the side.
- Serve the chickpea salad next to the chicken.
