Ingredients:
- About 18oz (500g) of ricotta cheese
- 2 untreated organic lemons
- 1/2 cup (100g) of sugar
- 4 eggs
- One vanilla bean or 1tsp of vanilla extract
- 1tsp of butter
Steps to make it:
Preheat the Oven:
- Preheat your oven to 180°C (350°F). Grease a 9-inch round baking dish with butter and dust it lightly with flour, tapping out any excess flour.
Prepare the Ricotta Mixture:
- Grate the zest of the two lemons, and the juice of one of the lemons.
- In a large mixing bowl, combine the ricotta cheese with the sugar.
- Fold in the eggs.
- Add the lemon zest and the lemon juice.
- You can also add a few drops of vanilla extract if you want (optional).
- Mix well until smooth and creamy, ensuring that all ingredients are fully incorporated.
Bake the Fiadone:
- Butter a pie pan and sprinkle some granulated sugar.
- Pour the ricotta mixture into the prepared baking dish, spreading it out evenly with a spatula.
- Place the baking dish in the preheated oven and bake for 300-45 minutes, or until the fiadone is set and lightly golden on top. It should have a slight jiggle in the center but not be liquidy.
Cool and Serve:
- Once baked, remove the fiadone from the oven and let it cool in the baking dish for about 15-20 minutes.
