Korean Jjajangmyeon inspired pasta with Korean black bean paste.
I emphasize "inspired" heavily here since this dish will taste different than the real Jjajangmyeon if you had it before. But if you like pasta in general, I think you will like this.

I like to use black bean paste because of the distinct flavor it brings to the dish.
This time I used gluten-free linguini pasta but you can also use other types of Asian noodles.
Step by Step Recipe Instruction Video:
Ingredients:
- 1 lb (500g) of thinly sliced pork
- 2 carrots julienned
- 5 oz (150g) spinach
- 1 medium onion chopped
- 3 cloves of garlic minced
- 1/4 cup (60ml) black bean paste
- 1 tbsp rice vinegar
- 1 box of gluten-free linguini pasta
- 2 tbsp olive oil
Steps to make it:
Here is how to make it:
- Heat up olive oil in a large pan on medium-high heat and sautee the onions for a couple of minutes.
- Add minced garlic and cook until the onions are almost translucent.
- Add carrots and stir for a couple of minutes while it cooks.
- Add the pork and cook until the pork is brown for about 7 minutes while stirring occasionally on medium-low heat.
- In the meantime cook the pasta according to the package instructions.
- Now add the black bean sauce to the pork mixture and stir, then put the lid on and cook for about 2 or 3 minutes.
- Add a cup of pasta water to the pork mixture. If the pasta is cooked, save some of the water after draining the pasta, in case the pork mixture gets thick or dries out a bit.
- Cook for a few minutes and add spinach.
- Cook until the spinach is wilted then mix in the cooked noodles.
