Paella is a quintessential Spanish dish that originated in the Valencia region on the eastern coast of Spain. Its history is deeply rooted in the cultural and agricultural traditions of the region, with influences from Moorish, Roman, and indigenous Spanish cuisines.

The word "paella" is derived from the Valencian word "paella," which refers to the wide, shallow pan traditionally used to cook the dish. The origins of paella can be traced back to the mid-19th century, although its precursors date back even further. Originally, paella was a simple and rustic dish prepared by farmers and laborers in the countryside, using ingredients readily available to them.

The traditional ingredients of paella include rice, saffron, olive oil, and a variety of meats, seafood, and vegetables. However, the specific ingredients used can vary depending on regional preferences and seasonal availability. Common proteins found in paella include chicken, rabbit, duck, and snails, while seafood paellas may feature shrimp, mussels, clams, and squid.

One of the most distinctive features of paella is its cooking method, which involves cooking the ingredients together in a single pan over an open flame or on a grill. This communal style of cooking allows the flavors to meld together and creates a deliciously aromatic and flavorful dish.

Over time, paella has evolved and adapted to reflect changing tastes and culinary influences. Modern variations of paella may incorporate non-traditional ingredients such as chorizo, artichokes, peppers, and even vegetarian or vegan alternatives. Additionally, different regions of Spain have developed their own unique versions of paella, each with its own distinct flavor profile and ingredients.

Today, paella is celebrated as one of Spain's most iconic and beloved dishes, enjoyed by people around the world. It is often served at festive gatherings, family celebrations, and special occasions, symbolizing the rich culinary heritage and cultural identity of the Spanish people. Whether enjoyed at a seaside restaurant in Valencia or prepared at home with friends and family, paella continues to hold a special place in Spanish cuisine and hearts alike.

I should note that I'm not from Spain (and regrettably haven't had the opportunity to travel there yet), so this interpretation of the dish is entirely my own. My family loved it, I hope yours will do too!



 Ingredients:

  • 5 small hicken thighs, bone-in and skin-on (about 600g / 1.3 lbs)
  • 150g (5.3 oz) chorizo sausage, sliced
  • 200g (7 oz) mixed seafood (shrimp, mussels, squid, etc.)
  • 200g (7 oz) gambas (large shrimp), peeled and deveined
  • 300g (10.5 oz) round short-grain rice
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tomato, grated
  • 1 teaspoon smoked paprika
  • 1 teaspoon saffron threads
  • 1.2 liters (5 cups) chicken broth
  • 120ml (½ cup) dry white wine
  • 2 tablespoons olive oil
  • Lemon wedges and fresh parsley for garnish
  • Salt and pepper to taste

 Steps to make it:

For this recipe, I used the Ducros Saffron, a great compromise of price and quality. I also used Arroz Rice Dacsa Round Rice, which worked out great. For best results, you'll also need the proper dish, such as this Enameled Cast Iron Oval Casserole or this Enamel Paella Pan, but you can use any large shallow pan if you don't have a proper paella dish.

Detailed Steps:

The Broth:

  1. I used the shrimp and shrimp heads to make a deliciously flavored broth.
  2. Boil shrimp until cooked. Remove the heads and keep boiling them in the broth for 15-20 minutes.
  3. Pour 2 to 3 cups (500 to 700 ml) of this broth into a bowl, add the saffron and let it sit.

The Dish:

  1. Prepare the chicken thighs by seasoning them generously with salt and pepper.
  2. Heat olive oil in a large paella pan or skillet over medium heat.
  3. Brown the chicken thighs on both sides until golden brown, then remove and set aside.
  4. In the same pan, add the chorizo slices and cook until they release their oils and turn slightly crispy.
  5. Remove and set aside with the chicken.
  6. Add onion, garlic, and red bell pepper to the pan. Sauté until softened and fragrant, about 5 minutes.
  7. Add rice to the pan, stirring to coat it with the flavors in the pan.
  8. Pour in the white wine, stirring occasionally.
  9. Pour in some of the broth.
  10. Return the chicken and chorizo to the pan, nestling them into the rice mixture.
  11. Season with salt and pepper, and gently stir to combine.
  12. Arrange the mixed seafood and gambas over the rice mixture evenly.
  13. Reduce heat to low and let the paella simmer, without stirring, until the rice is cooked and the liquid has been absorbed about 20-25 minutes. If the rice seems too dry, add a bit more broth.
  14. Once the rice is cooked and the seafood is tender, remove from heat and let it rest for 5 minutes.
  15. Garnish with lemon wedges and fresh parsley before serving.

Both white and red wine can be excellent choices to serve with paella, depending on your personal preference and the specific ingredients in the dish.

  1. White Wine: A crisp and refreshing white wine pairs well with seafood-based paellas or those with lighter, more delicate flavors. Consider serving a Spanish white wine such as Albariño or Verdejo, which have bright acidity and citrusy notes that complement the seafood and aromatic spices in the dish.
  2. Red Wine: A medium-bodied red wine can complement the rich and savory flavors of meat-based paellas, such as those containing chicken, rabbit, or chorizo. Opt for a Spanish red wine like Tempranillo or Garnacha, which have fruity undertones and smooth tannins that harmonize with the robust ingredients in the dish.

Ultimately, the choice between white and red wine comes down to personal preference and the specific flavor profile of the paella you're serving. You can also offer both options to your guests and let them choose based on their preferences. Additionally, if you're serving a mixed seafood and meat paella, you might consider a rosé wine as a versatile and balanced pairing that complements a wide range of flavors.

You can also pair it with a Spanish Beer: Choose a Spanish beer like Estrella Damm or Mahou to accompany your paella. The crisp and refreshing taste of the beer can balance the richness of the dish and cleanse the palate between bites.
