Ingredients:
- 1 sheet (about 320g/11 oz) puff pastry, thawed if frozen
- 4-5 tbsp (60-75ml) basil pesto
- 6-8 slices (about 100g/3.5 oz) prosciutto
- 1 cup (100g/3.5 oz) shredded mozzarella or provolone cheese
- 2 tbsp (30g) grated Parmesan cheese
- 1 egg, beaten (for egg wash)
- Freshly ground black pepper, to taste
Steps to make it:
Instructions
- Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface into a rectangle approximately 25cm x 30cm (10” x 12”).
- Spread the pesto evenly over the entire surface of the pastry, leaving a 1cm (½”) border on one long edge.
- Layer the prosciutto slices over the pesto, covering the surface evenly.
- Sprinkle the shredded cheese and Parmesan over the prosciutto. Add black pepper and red pepper flakes if desired.
- Roll the pastry tightly from the long edge without the border, creating a log. Brush the border with beaten egg and seal the seam.
- Chill the log in the freezer for 10-15 minutes to firm up for easier slicing.
- Slice the log into 2cm (¾”) thick rounds using a sharp knife.
- Arrange the pinwheels cut-side up on the prepared baking sheet, spacing them about 5cm (2”) apart.
- Brush the tops with beaten egg wash for a golden finish.
- Bake for 20-25 minutes until puffed, golden brown, and the cheese is melted and bubbly.
- Cool for 5 minutes before serving. Enjoy warm or at room temperature.
