- 1 lb (454 g) Italian ground sausage (mild or spicy, your choice)
- 1 lb (454 g) dry lentils, rinsed and drained
- 1 medium onion, diced
- 2-3 carrots, peeled and sliced into rounds
- 2-3 cloves garlic, minced
- 3 cup (680 g) marinara sauce
- 9 cups water (or if you prefer chicken or vegetable broth)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 bay leaf
- Salt and pepper, to taste
- 2 tablespoons olive oil
Steps to make it:
Instructions:
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- If you can only buy Ithe talian sausage with the casings, then just remove the casing by hand.
- Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned and cooked through about 5-7 minutes. Remove from the pot and set aside.
- In the same pot, add the remaining 1 tablespoon of olive oil. Add the diced onions and the carrots.
- Sauté until the onions are soft and translucent, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Stir in the rinsed lentils, oregano, basil, and bay leaf. Cook for 1 minute to toast the spices.
- Pour in the chicken or vegetable broth and the marinara sauce.
- Stir well to combine.
- Add the cooked sausage back into the pot.
- Bring the soup to a boil, then reduce the heat and let it simmer uncovered for 30-40 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if needed.
- Remove the bay leaf and season the soup with salt and pepper to taste. If desired, serve hot, garnished with grated Parmesan cheese and chopped parsley.
Tips:
- For a vegetarian version, skip the sausage and use vegetable broth.
- Add a handful of spinach or kale for extra greens in the last 5 minutes of cooking.
