 Ingredients:

  • 1 lb (454 g) Italian ground sausage (mild or spicy, your choice)
  • 1 lb (454 g) dry lentils, rinsed and drained
  • 1 medium onion, diced
  • 2-3 carrots, peeled and sliced into rounds
  • 2-3 cloves garlic, minced
  • 3 cup (680 g) marinara sauce
  • 9 cups water (or if you prefer chicken or vegetable broth)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
Optional: Grated Parmesan cheese and chopped fresh parsley for garnish

 Steps to make it:

Instructions:

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. If you can only buy Ithe talian sausage with the casings, then just remove the casing by hand.
  3. Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned and cooked through about 5-7 minutes. Remove from the pot and set aside.
  4. In the same pot, add the remaining 1 tablespoon of olive oil. Add the diced onions and the carrots.
  5. Sauté until the onions are soft and translucent, about 5 minutes.
  6. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  7. Stir in the rinsed lentils, oregano, basil, and bay leaf. Cook for 1 minute to toast the spices.
  8. Pour in the chicken or vegetable broth and the marinara sauce.
  9. Stir well to combine.
  10. Add the cooked sausage back into the pot.
  11. Bring the soup to a boil, then reduce the heat and let it simmer uncovered for 30-40 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if needed.
  12. Remove the bay leaf and season the soup with salt and pepper to taste. If desired, serve hot, garnished with grated Parmesan cheese and chopped parsley.

Tips:

  • For a vegetarian version, skip the sausage and use vegetable broth.
  • Add a handful of spinach or kale for extra greens in the last 5 minutes of cooking.
