 Ingredients:

  • 2 cans (15 oz / 425 g each) chickpeas, drained and patted dry
  • 1 ½ cups (about 170 g) shredded cheese (mix of mozzarella + cheddar works best)
  • ¼ cup (about 25 g) grated parmesan
  • 2–3 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (or smoked paprika for more depth)
  • ½ tsp dried oregano or thyme
  • a pinch of chili flakes for heat (optional)

Instructions

  1. Preheat & prep
    Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Dry the chickpeas well
    This is key for crispiness—pat them dry with paper towels and remove loose skins if you have time.
  3. Season
    Toss chickpeas with olive oil, garlic, salt, pepper, paprika, and herbs until evenly coated.
  4. First roast (crisp the base)
    Spread chickpeas in a single layer and roast for 20–25 minutes, shaking the pan halfway through.
    They should look slightly golden and dry.
  5. Add the cheese layer
    Pull the tray out and sprinkle mozzarella + cheddar evenly over the chickpeas, then finish with parmesan.
  6. Bake again (the magic step)
    Return to oven for 10–15 minutes, until the cheese is bubbling, deeply golden, and crisp at the edges.
  7. Cool slightly & break apart
    Let it sit 5 minutes—it firms up as it cools. Break into chunks or slices like in your photo.
