When our family lived in New England, summers overflowed with an ample supply of lobsters, conveniently accessible and reasonably priced at local grocery stores. As a result, we enjoyed homemade, fresh lobster rolls nearly every other weekend.

While we can no longer find inexpensive lobster anymore where we live, we sometimes crave that experience, and this sandwich roll is the closest we can get.

This sandwich roll showcases a blend of New England-style lobster roll tradition by using Argentinian red shrimp and egg salad, encapsulating the essence of our cherished dish. Hope you'll enjoy it as much as we do!

 Ingredients:

  • 1 lb Argentinian Red Shrimp
  • 4 hard boiled eggs
  • 1 heaping spoonful of mayo
  • 1/2 lemon juice
  • 2 green onions
  • 1/2 tsp smoked paprika
  • black pepper and salt to taste
  • 4-6 Brioche split top hot dog buns

 Steps to make it:

  1. Start by boiling a pot of water.
  2. Once the water is boiling add shrimp and cook until shrimp are curled up to make letter C. This shouldn't take more than 5-7 minutes.
  3. Strain shrimp and rinse under cold water.
  4. Cut the shrimp into quarters and place them in a bowl.
  5. Chop green onions and add them to the shrimp.
  6. Chop hard-boiled eggs and add them to the shrimp.
  7. Add shrimp, smoked paprika, salt, pepper, and mix.
  8. Spread a thin layer of mayo on the flat of the buns and toast them in the pan on both sides until light golden brown.
  9. Split the top of the buns and stuff them with the shrimp and eggs salad.
  10. Enjoy!
