It is a simple but delicious cookie recipe. They are crumbly and buttery, our favorite is to use raspberry jelly but you can always experiment with whatever suits you best.
The secret that makes this crumbly butter shortbread dough is simply the order in which you mix the ingredients, by letting the butter bind to the sugar first and adding the flour later. For best results, keep the butter and eggs at room temperature for a few hours before starting.
Step by Step Recipe Instruction Video:
Ingredients:
- 2 cups or 250g of flour
- 1 stick (120g) of unsalted butter
- ½ cup or 110g of sugar
- 2 large eggs
- 1 pinch of salt
- Raspberry Jelly
Steps to make it:
- In a mixing bowl, mix the butter and the sugar, until the mixture turns white.
- Then add the egg yolk, flour, and salt.
- Knead by hand.
- Butter a baking sheet and sprinkle flour, or alternatively line it with parchment paper.
- Roll walnut-sized balls of dough and arrange them on the baking sheet.
- Press your finger in the middle of each ball, and repair any large cracks.
- Fill each hole with jelly.
- Lightly beat the egg white with a fork.
- Brush onto the sides of each cookie.
Preheat the oven to 375° Fahrenheit (190° Celcius) and bake for about 20 minutes, watching closely.
You can also add hazelnut or almond.
