This dish bursts with flavor and is versatile enough to pair with a variety of complementary ingredients.
This is one of our family's favorite recipes, it is quick and easy, and packed with flavors if you get quality ingredients. It is an appetizer, but it can also be a complete meal, lunch, or dinner, on a hot summer day.
Ingredients:
- 7 small ripe tomatoes
- 1 bunch of fresh basil leaves
- 220 grams (8 ounces) of soft mozzarella cheese
- 2 cloves of garlic
- 4 tablespoons of extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon of Dijon mustard
- 1 baguette or Italian bread loaf
- Salt and pepper to taste

Here are the steps to make this delicious Bruschetta with Mozzarella and Tomato:
The bread:
- Start by preheating your oven to 375°F (190°C). Slice the baguette or Italian bread loaf diagonally into 1/2-inch thick slices.
- Place them on a baking sheet.
- Bake for about 8-10 minutes, or until the slices turn golden brown and crispy.
- Take the garlic cloves and cut them in half. Rub the cut side of each garlic clove over one side of each bread slice. This will infuse the bread with a hint of garlic flavor.
- Set aside.
The Balsamic Glaze Drizzle:
Add a touch of sweetness and acidity by drizzling a balsamic glaze over the bruschetta just before serving. The rich, tangy flavor of the balsamic vinegar complements the freshness of the tomatoes and basil.
This balsamic vinaigrette is our family's favorite salad dressing, a simple but delicious flavor.
- Combine the olive oil, balsamic vinegar, and the Dijon mustard in a dish or in a small container,
- add salt and pepper to taste,
- and mix well until the solution emulsifies.
Putting it all together:
Now, it's time to assemble the bruschetta.
- Wash the tomatoes and basil leaves. Remove the stems from the tomatoes and slice them into thin slices.
- Cut the mozzarella cheese into thin slices.
- Place a slice of mozzarella cheese onto each garlic-rubbed bread slice.
- Add a slice of tomato on each slice of cheese.
- Drizzle some balsamic vinaigrette on each bruschetta.
- Garnish with a few fresh basil leaves for an extra touch of freshness.
- Serve the bruschetta immediately and enjoy!
Variations:
- You can add a drizzle of balsamic glaze or reduction over the assembled bruschetta for a tangy twist.
