- Onions, 1.5 kg (about 3.3 lbs) yellow onions, thinly sliced
- Butter, 75g (5 tablespoons) unsalted butter
- Oil, 1 tablespoon (15 ml) olive oil
- Sugar, 1 teaspoon (4g) sugar (to help with caramelization)
- Flour, 2 tablespoons (16g) all-purpose flour
- Beef Broth, 1.5 liters (about 6 cups) beef broth, preferably homemade or high-quality store-bought
- White Wine, 120 ml (½ cup) dry white wine
- Bay Leaves, 2 bay leaves
- Thyme, 4 fresh thyme sprigs or 1 teaspoon dried thyme
- Salt, To taste
- Black Pepper, Freshly ground, to taste
- French Baguette, 8 slices, toasted
- Cheese, 200g (about 2 cups) grated Gruyère cheese

Caramelize the Onions:
- In a large, heavy-bottomed pot, melt the butter with the olive oil over medium heat. Add the sliced onions and stir until they are well-coated with the butter. Reduce the heat to medium-low.
- Sprinkle the sugar over the onions and cook, stirring frequently, for about 40-45 minutes, or until the onions are deeply caramelized and have a jam-like consistency. Be patient; this slow cooking process is key to developing the soup’s rich flavor.
Deglaze and Simmer:
- Sprinkle the flour over the caramelized onions and cook, stirring, for 2-3 minutes to remove the raw flour taste.
- Slowly add the white wine to deglaze the pot, scraping up any browned bits from the bottom. Add the beef broth, bay leaves, and thyme. Season with salt and pepper to taste.
