Shakshuka (Arabic: شكشوكة : šakšūkah, also spelled Shakshouka or chakchouka) is an easy, healthy breakfast (or any time of the day) recipe commonly made in Israel and other parts of the Middle East and North Africa. It’s a simple combination of simmering tomatoes, onions, garlic, spices, and gently poached eggs. It’s nourishing, filling, and a recipe you're guaranteed to make time and again.

 Ingredients:

  • 2 tablespoons of olive oil
  • 1 onion, thinly sliced
  • 1 green, yellow, or red bell pepper, thinly sliced
  • 2 cloves of garlic, minced
  • A dozen green olives
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon chili flakes or cayenne pepper (optional, for added heat!)
  • 1 can of diced tomatoes
  • 4-6 large eggs
  • Fresh parsley or cilantro, chopped (for garnish)
  • Fetta cheese crumbles (optional)
  • Crusty bread or pita, for serving
  • Salt and pepper to taste

 Steps to make it:

Instructions

  1. Heat olive oil in a large skillet or frying pan over medium heat.
  2. Add the sliced onions and bell peppers to the pan and sauté until they are soft and slightly caramelized, about 5-6 minutes.
  3. Stir in the minced garlic, ground cumin, paprika, and chili flakes (if using). Cook for an additional minute to release the flavors.
  4. Pour the diced tomatoes, including their juices, into the pan. Season with salt and pepper to taste. Simmer the tomato mixture for 10-15 minutes, until the sauce thickens slightly.
  5. Create small wells in the sauce using a spoon, and carefully crack the eggs into each well. Cover the pan and let the eggs poach in the tomato sauce for about 6-8 minutes, or until the egg whites are set, but the yolks are still slightly runny.
  6. Remove the pan from heat and sprinkle the chopped parsley or cilantro over the top.
  7. Serve the shakshuka directly from the pan, along with crusty bread or pita for dipping and scooping up the flavorful sauce.
