Ingredients:
- 2 tablespoons of olive oil
- 1 onion, thinly sliced
- 1 green, yellow, or red bell pepper, thinly sliced
- 2 cloves of garlic, minced
- A dozen green olives
- 1 teaspoon of ground cumin
- 1 teaspoon of paprika
- 1/2 teaspoon chili flakes or cayenne pepper (optional, for added heat!)
- 1 can of diced tomatoes
- 4-6 large eggs
- Fresh parsley or cilantro, chopped (for garnish)
- Fetta cheese crumbles (optional)
- Crusty bread or pita, for serving
- Salt and pepper to taste

- Heat olive oil in a large skillet or frying pan over medium heat.
- Add the sliced onions and bell peppers to the pan and sauté until they are soft and slightly caramelized, about 5-6 minutes.
- Stir in the minced garlic, ground cumin, paprika, and chili flakes (if using). Cook for an additional minute to release the flavors.
- Pour the diced tomatoes, including their juices, into the pan. Season with salt and pepper to taste. Simmer the tomato mixture for 10-15 minutes, until the sauce thickens slightly.
- Create small wells in the sauce using a spoon, and carefully crack the eggs into each well. Cover the pan and let the eggs poach in the tomato sauce for about 6-8 minutes, or until the egg whites are set, but the yolks are still slightly runny.
- Remove the pan from heat and sprinkle the chopped parsley or cilantro over the top.
