These pork dumplings are a delicious and easy-to-make dish that is perfect for a quick weeknight meal. The filling is made with diced pork chops (but you can also use lean ground pork), ginger, garlic, and green onions, and the dumplings are steamed until they are cooked through. They can be served with a dipping sauce of your choice, such as soy sauce, vinegar, or chili oil.

 Ingredients:

  • 1 pound lean ground pork or boneless pork chops
  • 2 tablespoons grated ginger
  • 3 cloves garlic, minced
  • 1 bunch green onions, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Dumpling dough or eventually 50 gyoza wrappers
  • Vegetable oil, for cooking

The Dough

I usually make my own dough, see Making Handmade Dumpling Dough from scratch.

Alternatively, you can also use pre-made gyoza wrappers.

Mixing the Filling:

  • In a large bowl, combine the ground pork, ginger, garlic, green onions, salt, and pepper.
  • Mix well to combine.

Assembling the Dumplings:

I’ll be honest, this might take some time to get the hang of. But hey, there are different ways to fold the dough, so feel free to experiment and find what works best for you. There’s no right or wrong way to do this, just watch the video closely and you’ll be a pro in no time!

  • Place a wrapper in the palm of your hand.
  • Place a teaspoon of the filling in the center of the wrapper.
  • Dip your finger in water and run it around the edge of the wrapper (if you are using handmade dough, you don't need to dip your finger in water).
  • Fold the wrapper in half, pleating the edges as you go.
  • Pinch the edges of the wrapper together to seal the filling.
  • Repeat steps 2-4 with the remaining wrappers and filling.

Cooking the Dumplings:

  • Heat a large skillet or wok over medium heat.
  • Add a drizzle of vegetable oil.
  • Steam the dumplings for 20 minutes, or until cooked through.

Serve immediately with your favorite dipping sauce.

Freezing the Dumplings:

These dumplings freeze very well (raw).

Place them on a cutting board, spaced so that they don't touch each other, and place the board in the freezer. When they are frozen solid, you can then place them all together in a freezer bag.

To cook them, place the frozen dumplings in the skillet (oil the bottom so they don't stick) and steam them for 30 minutes instead of 20.
