Moroccan-style Lamb Stew

Lamb Stew with cinnamon and dates

Here is an interesting dish for you if you are feeling adventurous. It may sound weird to think of lamb cooked with cinnamon, but you have to try it to believe it when I say it's to die for.

Here in Corsica, Moroccan dishes are pretty popular, so once again, trying to please my family, I looked up some recipes online and got inspired. Moroccan food seems to have a very fine balance of spices, sweet and savory flavors that comes from their fragrant spices and dried fruits. And this dish is a perfect example of that. It has the savory taste from the spices and the lamb, and the sweetness from the dates. Give it try!

Step by Step Recipe Instruction Video:

 Ingredients:

  • 3 pounds (1.36 kg) lamb shoulder, cut into bite-sized pieces
  • 3 large carrots, chopped
  • 2 cans (2 x 15 oz or 2 x 425g) chickpeas, drained
  • 1 can (15 oz or 425g) diced tomatoes
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup (85g) chopped dates
  • 2 bay leaves
  • 1 teaspoon (2g) ground cinnamon
  • 2 teaspoons (4g) ground coriander
  • 1 teaspoon (2g) ground cumin
  • 2 tablespoons (30ml) olive oil
  • Salt and pepper to taste

 Steps to make it:

  1. In a large pot or dutch oven heat olive oil over medium-high.
  2. Brown the lamb on all sides until lightly caramelized.
  3. Take out the lamb onto a dish for now and set aside.
  4. In the same pot add onions and garlic and cook until translucent.
  5. Turn the heat down a notch and add more olive oil if you have to.
  6. Add the bay leaves, cumin, coriander, and cinnamon.
  7. Cook for about a minute.
  8. Return the lamb to the pot and add carrots, then mix.
  9. Add a can of tomatoes and add water, equal in size to the canned tomatoes.
  10. Bring it to a boil on high heat then reduce the heat to low and let it simmer for about 45 minutes.

This dish is usually served with couscous. However, I don't see why you can't serve it with rice or crusty bread.
