Beef Rice Pilaf

Rice pilaf or fried rice? I think they are pretty much the same thing, really!

Rice pilaf was one of the easiest dishes that I could make for myself after school when I was in grade school. When I came home after school my parents would be still at work so I would always make something for myself and if there was any left my parents would eat it when they got home.

You can chop up any kind of veggies you have and make this dish with or without meat. It is fairly easy and quick to make. You can prepare and stir-fry the veggies and meat while the rice is cooking, and that's typically around 30 minutes until the rice is done.

 Ingredients:

  • 1 lb (500g) beef diced small
  • 3 carrots diced
  • 3 medium potatoes diced
  • 1 medium onion diced
  • 3 cloves of garlic minced
  • 12 oz (350g) frozen peas
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 cups (370g) rice
  • salt and pepper to taste

Here is how to make it:

Rinse rice with cold water three times ( don't ask me why 3 times, my parents always told me to do so since I was a kid) and cook according to your rice cooker instructions or fill with water until about an inch over the rice. Please listen to Uncle Roger when it comes to making the rice 😂.

In the meantime, heat olive oil in a large frying pan on medium heat.

Sautee onions and garlic, then add carrots and potatoes.

Cook for about 5 minutes and add beef, and cover with a lid.

Cook for another 5 -10 minutes covered and add soy sauce. Cook until potatoes are cooked but not mushy.

You can add water to prevent it from burning or sticking if it looks too dry but usually, the meat and veggies create enough moisture.

In a separate pan cook the peas until tender. I usually boil it in water and then drain the water.

When the rice is cooked, put it into the meat and veggie mix and stir.

You can drizzle some olive oil if you prefer.

Plate the pilaf in a shallow bowl and garnish with peas around.
