  • 3 cups almond flour (≈ 288 g)
  • 1 cup nonfat plain Greek yogurt (≈ 245 g)
  • 1½ cups shredded mozzarella or cheddar cheese (≈ 170 g)
  • 1 large egg
  • 1 tbsp baking powder (≈ 12 g)
  • ¼ cup fresh chives, finely chopped (≈ 10 g)
  • ½ tsp salt
  • ¼ tsp black pepper (optional)
Optional Toppings:
  • Egg wash (1 beaten egg)
  • Sesame seeds
  • Everything bagel seasoning
  • Poppy seeds
  • Extra shredded cheese

 Steps to make it:

1. Mix the Dough

In a large bowl, combine:

  • almond flour
  • baking powder
  • salt
  • black pepper

Add:

  • Greek yogurt
  • shredded cheese
  • egg
  • chopped chives

Mix with a spoon until the dough begins to come together, then use your hands to gently knead until evenly combined. The dough should be soft and slightly sticky.

If the dough is too wet, add a little more almond flour, one tablespoon at a time.

2. Shape the Buns

Divide the dough into 8 equal portions.

Roll each portion into a smooth ball and gently flatten into a bun about 3–3½ inches (7.5–9 cm) wide.

If desired, brush with egg wash and sprinkle with sesame seeds or everything bagel seasoning.

3. Air-Fry

Preheat your air fryer to 375°F (190°C) for 3–5 minutes.

  1. Line the air fryer basket with parchment paper or lightly grease it.
  2. Place the buns in a single layer, leaving about 1 inch (2.5 cm) of space between each one.
  3. Air-fry at 375°F (190°C) for 10 minutes.
  4. Carefully flip each bun over using tongs or a spatula.
  5. Continue cooking for another 10 minutes, or until both sides are golden brown and the center reaches at least 200°F (93°C).

Tip: Every air fryer cooks a little differently. If the tops begin browning too quickly, reduce the temperature to 350°F (175°C) for the final few minutes. The buns are done when they're golden on both sides and feel firm when gently pressed.

4. Cool

Transfer the buns to a wire rack and let cool for 10 minutes before slicing.

The texture will continue to firm up as they cool.
