Brocciu
Brocciu is a Corsican fresh cheese produced from sheep's milk.
Brocciu is a Corsican cheese made with sheep's or sometimes goat milk. It is produced from a combination of milk and whey (the liquid remaining after milk has been curdled and strained), giving it some of the characteristics of whey cheese.
It is notable as a substitute for lactose-rich Italian Ricotta, as brocciu contains less lactose. It can be eaten by itself or cooked in meals such as cannelloni or deserts such as Fiadone.
