Instructions:

Prepare the Cranberries:

  • Rinse the cranberries under cold water and remove any stems or debris.

Zest the Orange:

  • Using a microplane or fine grater, zest the orange. Set aside.

Combine Ingredients in a Saucepan:

  • In a medium-sized saucepan, combine the cranberries, sugar, orange juice, and star anise.
  • Stir well to ensure the sugar coats the cranberries evenly.

Cook Over Medium Heat:

  • Place the saucepan over medium heat and bring the mixture to a gentle boil.
  • Once boiling, reduce the heat to low and let it simmer for about 10-15 minutes, or until the cranberries burst and the sauce thickens.

Add Orange Zest:

  • Stir in the orange zest during the last 2-3 minutes of cooking to infuse the sauce with a burst of citrus aroma.

Check for Consistency:

  • Use the back of a spoon to slightly mash the cranberries or leave them whole, depending on your desired consistency.
  • You can also press the mix through a strainer to remove the skin if you prefer a smoother texture.
  • The sauce will continue to thicken as it cools.

Remove Star Anise:

  • Once the desired consistency is reached, remove the star anise from the sauce.

Cool and Serve:

  • Allow the cranberry sauce to cool to room temperature before transferring it to a serving dish.
  • Refrigerate until ready to serve.

Garnish (Optional):

  • Garnish with a few whole cranberries or a sprinkle of orange zest before serving for an extra festive touch.

This Zesty Star Anise Cranberry Sauce is not only a delightful accompaniment to your Thanksgiving or Christmas turkey but can also be enjoyed with roast chicken, pork, or even as a flavorful spread for sandwiches.
