Cooking Time:
This dish is rooted in Colombian and Latin American culinary traditions, with influences from Spanish colonial cuisine. Here’s the breakdown:
Primary Influences:
- Colombian: The concept of “Mar y Tierra” (Sea and Land) is popular throughout Latin America, particularly in coastal Colombian cities like Cartagena and Barranquilla, where fresh seafood meets quality beef from the interior regions.
- Spanish Colonial: The use of saffron rice reflects Spanish influence dating back to the colonial period. Saffron-infused rice (similar to Spanish “arroz con azafrán”) became a staple in Latin American celebratory cooking.
- Latin American Home Cooking: The combination of proteins with aromatic yellow rice is common across Latin America, with variations in Cuba, Puerto Rico, and throughout the Caribbean coast.
Regional Context:
This style of dish is particularly associated with:
- Coastal Colombia - where surf and turf combinations are considered festive fare
- Caribbean Latin cuisine - the yellow rice with vegetables is a regional staple
- Latin American celebration cooking - reserved for special occasions, holidays, and family gatherings
Modern Classification:
Could also be described as:
- Latin American Fusion - blending traditional ingredients with refined plating techniques
- Contemporary Colombian - honoring traditional flavors with modern presentation
- Coastal Latin cuisine - emphasizing the marriage of seafood and land proteins
The dish represents the type of elevated home cooking found in Latin American households during Christmas, New Year’s Eve, anniversaries, and other significant celebrations, where the best ingredients are used, and extra care is taken with preparation and presentation.
Ingredients:
- 2 beef tenderloin medallions or sirloin steaks (150g/5oz each)
- 8-10 large shrimp (prawns), peeled and deveined, tails on
- 2 tbsp olive oil or butter
- 2 sprigs fresh rosemary
- 3 cloves garlic, smashed
- Salt and black pepper to taste
- 1 tbsp butter for finishing
- 200g/7oz pearl onions, peeled
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tsp sugar (optional, for caramelization)
- Salt and pepper to taste
- 200g/1 cup long-grain white rice (basmati or jasmine)
- 480ml/2 cups chicken or vegetable stock
- Pinch of saffron threads (or 1/4 tsp turmeric for color)
- 1 small carrot, finely diced
- 1 tbsp butter or olive oil
- 1/2 small onion, finely chopped
- Salt to taste
Steps to make it:
Saffron Rice:
- Steep saffron threads in 2 tbsp warm water for 5 minutes.
- Heat butter in a medium saucepan over medium heat. Sauté onion until softened, about 3 minutes.
- Add rice and stir to coat with butter, toasting for 1-2 minutes.
- Add diced carrots, stock, saffron with its water, and salt.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender.
- Remove from heat and let stand covered for 5 minutes. Fluff with a fork.
Pearl Onions:
- Blanch pearl onions in boiling water for 2 minutes, drain, and peel if not pre-peeled.
- Heat butter and oil in a small pan over medium heat.
- Add onions and cook, stirring occasionally, for 12-15 minutes until golden and caramelized.
- Sprinkle with sugar (if using) in the last 2 minutes. Season with salt and pepper.
Steak:
- Remove steak from refrigerator 20 minutes before cooking. Pat dry and season generously with salt and pepper.
- Heat 1 tbsp oil in a heavy skillet over high heat until very hot.
- Add steaks and sear for 3-4 minutes per side for medium-rare (adjust for preference).
- Add 1 sprig rosemary, garlic, and butter to the pan. Tilt pan and baste steaks with melted butter for 1 minute.
- Remove steaks and let rest for 5 minutes.
Shrimp:
- Pat shrimp completely dry with paper towels. Season with salt and pepper.
- In the same pan (or a clean one), heat 1 tbsp oil over high heat.
- Add shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque with nice caramelization.
- Add remaining rosemary sprig and garlic, cook for 30 seconds more.
- Remove immediately to avoid overcooking.
To Serve:
Mound the saffron rice on plates. Arrange the steak medallions, shrimp, and pearl onions artfully around the rice. Drizzle any pan juices over the proteins. Serve immediately.
Tips
- Don’t overcrowd the pan when cooking shrimp—they need space to caramelize properly
- Use a meat thermometer for perfect steak: 52°C/125°F for rare, 57°C/135°F for medium-rare
- The pearl onions can be prepared ahead and reheated
- For extra flavor, deglaze the steak pan with a splash of white wine or brandy before plating
