With tender lamb, succulent chicken, flavorful merguez sausage, and hearty chickpeas, this dish is a celebration of diverse cuisines.

Here's another gem from my mother-in-law's cookbook, and it's undoubtedly her signature dish and her "go-to" recipe for all major family gatherings. While its origin remains a mystery, this recipe has been a cherished staple in our family for a long time. With her unique twist and custom spice blend, my mother-in-law has truly made this classic her own. I hope you'll savor every flavorful bite as much as we do.

Harissa Sauce: Spice up your couscous with harissa—a fiery North African chili paste made with roasted red peppers, chili peppers, garlic, and spices. Drizzle a little harissa over the couscous for an extra kick of flavor. For this dish, this time I opted for the Le Phare du Cap Bon Harissa, a popular choice commonly found in Corsica, where I prepared this meal.

Couscous Grain: Be careful when selecting couscous grains, as they are available in a diverse range of shapes, flavors, and sizes. This time I used plain Near East Couscous and everyone loved it.

Mergez Sausage: The closest equivalent to merguez sausage in the US is spicy lamb or beef sausage. While merguez sausage is traditionally made with lamb, it can sometimes be challenging to find an exact match outside of North Africa or Europe. However, many specialty or gourmet grocery stores in the US offer spicy lamb or beef sausages that share similar flavor profiles and levels of spiciness to merguez. Look for sausages seasoned with North African-inspired spices like cumin, paprika, coriander, and chili peppers for the closest approximation to merguez sausage. Alternatively, you can try making your own Merguez-style sausage at home using ground lamb or beef seasoned with a blend of spices characteristic of Merguez.

Meatless Option: You can easily remove (or substitute) the meats from this recipe and still create a wonderful and tasty dish. Consider eggplant as a wonderful choice, and perhaps mushrooms if you're feeling adventurous?

 Ingredients:

  • 250 g (1 1/2 cups) couscous
  • 200 g (7 oz) lamb, diced
  • 200 g (7 oz) chicken breast, diced
  • 200 g (7 oz) merguez sausage, sliced
  • 1 can (400 g) chickpeas, drained and rinsed
  • 2 medium Daikon, cubed
  • 2 medium zucchinis, cubed
  • 4 carrots, peeled and cut into chunks
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 tablespoons of couscous spice mix
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons Harissa Sauce
  • 4 Dates

 Steps to make it:

Couscous Spice Mix:

Creating your own couscous spice mix allows you to tailor the flavors to your liking and adds a personal touch to your dish. Here's a simple recipe for a homemade couscous spice mix:

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • Salt and pepper, to taste

Combine all the spices in a small bowl and mix well until evenly blended. Adjust the quantities according to your taste preferences, adding more or less of each spice as desired. This versatile spice mix will add depth and warmth to your couscous dishes, enhancing their flavor profile with each savory bite. Enjoy experimenting with different spice combinations to create your perfect couscous seasoning!

Detailed Steps for Making the Couscous dish:

Brown the Meats:

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced lamb and cook until browned and cooked through about 6-8 minutes. Remove from the skillet and set aside.
  • In the same skillet, add another tablespoon of olive oil. Add the diced chicken and cook until browned and cooked through about 5-7 minutes. Remove from the skillet and set aside.
  • Add the sliced merguez sausage to the skillet and cook until browned about 4-5 minutes. Remove from the skillet and set aside.

Sautée the Vegetables:

  • In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant.
  • Add the Onions and carrots, and the Couscous spice mix.
  • Cook for another 3-4 minutes, stirring occasionally, until the vegetables are heated through and coated with the spices.

Simmer the goodness:

  • Place the meats In a large pot or Dutch oven.
  • Cover with boiling water.
  • Mix in the roasted vegetables.
  • Bring to a boil and let simmer for 10 minutes.
  • Add in the chickpeas, daikon, and zucchini.
  • Incorporate the dates, chopped into small pieces.
  • Simmer for another 15 to 12 minutes.
  • Adjust the seasoning by adding more couscous spices, salt and pepper, and some Harissa to taste.

Prepare the Couscous:

  • Cook the couscous grain according to package instructions.
  • Add in a tablespoon of butter.
  • Fluff with a fork once cooked and set aside.

Combine and Serve:

  • Add some couscous to each plate.
  • Select a piece of each of the meats and add it to the plate.
  • Add the vegetables and sauce.
  • Garnish the couscous with chopped parsley or cilantro and serve with additional Harissa on the side if needed.
