Ingredients:
- 2 large croissants
- 2 slices of ham
- 2 slices of cheese (cheddar or Swiss work well)
- 2 eggs
- 2 teaspoons of Dijon mustard
- Salt and pepper, to taste

- Preheat your oven to 350°F (175°C).
- Using a sharp knife, slice the croissants in half horizontally to create a top and bottom portion. Set them aside.
- In a small bowl, crack the eggs and whisk them together. Season with salt and pepper according to your taste.
- Heat a non-stick skillet over medium heat and coat it lightly with cooking spray or a small amount of butter. Pour the beaten eggs into the skillet, stirring occasionally, until they are scrambled and fully cooked. Remove from heat.
- Spread mustard evenly on the bottom halves of the croissants.
- Layer one slice of ham and one slice of cheese on each bottom half of the croissants.
- Divide the scrambled eggs equally between the croissants, placing them on top of the ham and cheese.
