 Ingredients:

  • 1 cup all-purpose flour
  • 1 cup Greek yogurt
  • 2 eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1–2 tablespoons brown sugar or preferred sugar substitute
  • 1/4 cup milk, soy milk, or almond milk
  • A dash of vanilla extract
  • A pinch of salt

 Steps to make it:

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, brown sugar, and salt.
  • In a separate bowl, whisk the Greek yogurt, eggs, milk, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing; a few small lumps are fine.
  • Let the batter rest for 5 minutes. If it appears too thick, add a small splash of milk.
  • Heat a lightly greased skillet or nonstick pan over medium-low heat.
  • Pour approximately 1/4 cup of batter onto the pan for each pancake.
  • Cook until bubbles form on the surface and the edges begin to set, about 2–3 minutes.
  • Flip and cook for another 1–2 minutes, or until golden brown and cooked through.
  • Serve warm with your favorite toppings.
