- 250 g (2 cups) all-purpose flour
- 500 ml (2 cups) whole milk
- 120 ml (1/2 cup) water

- 45 g (3 tbsp) unsalted butter, melted
- 15 g (1 tbsp) sugar (optional for sweet crêpes)
- 2 g (1/2 tsp) salt
- 5 ml (1 tsp) vanilla extract (optional for sweet crêpes)
- Butter or neutral oil, for the pan

1. Make the Batter
In a large mixing bowl, whisk together the flour and eggs. Gradually pour in the milk and water while whisking continuously until smooth.
Add the melted butter, salt, and optional sugar and vanilla. Whisk until the batter is silky and lump-free.
2. Rest the Batter
Let the batter rest for at least 20–30 minutes at room temperature. This helps create tender, delicate crêpes.
3. Heat the Pan
Warm a nonstick skillet or crêpe pan over medium heat. Lightly grease with butter or oil.
4. Cook the Crêpes
Pour about 60 ml (1/4 cup) of batter into the pan, immediately swirling to coat the surface in a thin layer.
Cook for 1–2 minutes until the edges begin to lift and the bottom turns lightly golden. Flip and cook the second side for about 30 seconds.
Transfer to a plate and repeat with the remaining batter.
A Little Crêpe Wisdom
Don’t worry if the first one or two crêpes don’t turn out perfectly — that’s completely normal. My mother used to laugh and say the first crêpe was always for the cook. It often takes a couple of tries to get the pan temperature just right and learn how much batter to swirl into the pan.
Once the pan is properly heated, the crêpes become easier and more consistent. Even the imperfect ones still taste delicious, especially when eaten warm straight from the pan.
