Golden Chicken & Butternut Squash Curry — Cozy, Fragrant & Weeknight-Perfect

This recipe was born on a rainy evening that didn’t feel like it belonged to any single cuisine.

The fridge was half full, the pantry was overflowing with spices from different cooking phases of life — turmeric from Indian curries, paprika from weekend stews, coconut milk left over from a Thai soup experiment — and sitting on the counter was a beautiful butternut squash that clearly needed a purpose.

There was chicken thawing. There were peas in the freezer. There was rice on the stove.

And there was that quiet moment every home cook knows: “Let’s see what happens.”

The onions were slowly caramelized, the ginger and garlic hit the pan, and suddenly the kitchen smelled like something familiar but new at the same time.  Ingredients:

  • Chicken thighs or breast, cubed — 600 g | 1.3 lb
  • Butternut squash, peeled & cubed — 500 g | 1.1 lb
  • Onion, diced — 150 g | 1 cup
  • Garlic, minced — 15 g | 1 Tbsp
  • Fresh ginger, grated — 10 g | 2 tsp
  • Green peas (frozen or fresh) — 120 g | 1 cup
  • Tomato purée — 200 ml | ¾ cup
  • Coconut milk or cream — 250 ml | 1 cup
  • Chicken stock — 250 ml | 1 cup
  • Vegetable oil or ghee — 30 ml | 2 Tbsp
  • Ground turmeric — 5 ml | 1 tsp
  • Ground cumin — 5 ml | 1 tsp
  • Ground coriander — 5 ml | 1 tsp
  • Paprika — 5 ml | 1 tsp
  • Garam masala — 5 ml | 1 tsp
  • Chili powder (optional) — 2.5 ml | ½ tsp
  • Salt — 7.5 ml | 1½ tsp
  • Black pepper — 2.5 ml | ½ tsp
  • Fresh cilantro, chopped — ¼ cup
  • Fresh lemon juice — 15 ml | 1 Tbsp

 Steps to make it:

Detailed Cooking Steps

1. Build the Flavor Base

Heat oil or ghee in a large pot over medium heat.
Add onions and sauté for 6–8 minutes until soft and golden.
Stir in garlic and ginger; cook 30 seconds until fragrant.

2. Toast the Spices

Add turmeric, cumin, coriander, paprika, chili powder, salt and pepper.
Toast gently for 1 minute, stirring constantly.

3. Brown the Chicken

Add chicken pieces.
Sear for 4–5 minutes until lightly golden on all sides.

4. Create the Curry Sauce

Stir in tomato purée and simmer 5 minutes until thickened and glossy.

5. Add Squash & Simmer

Add butternut squash and chicken stock.
Cover and simmer 15 minutes until squash is fork-tender.

6. Finish the Curry

Stir in coconut milk and green peas.
Simmer uncovered 8–10 minutes until rich and creamy.

Sprinkle in garam masala and lemon juice.

7. Garnish & Serve

Top with fresh cilantro.
Serve hot over steamed rice with warm flatbread on the side — just like the photo.
