 Ingredients:

Pork & Vegetables:
  • 1½ lb pork tenderloin or pork loin, thinly sliced (≈680 g)
  • 2 tbsp olive oil (≈30 ml)
  • 1 large yellow onion, sliced
  • 2 bell peppers (red, yellow, or green), sliced
  • 4 cloves garlic, minced
Fajita Seasoning:
  • 2 tsp smoked paprika
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp black pepper
For Serving:
  • 8 flour or corn tortillas
  • Lime wedges
  • Fresh cilantro, chopped (optional)
Optional Toppings:
  • Sour cream
  • Shredded cheese
  • Guacamole
  • Pico de gallo
  • Salsa

Step-by-Step Instructions

1. Season the Pork

In a large bowl, combine the pork with:

  • olive oil
  • smoked paprika
  • paprika
  • onion powder
  • oregano
  • cumin
  • salt
  • black pepper

Mix well until the pork is evenly coated.

2. Cook the Pork

Heat a large cast-iron skillet or heavy pan over medium-high heat.

Add the seasoned pork and cook for 5–6 minutes, stirring occasionally, until lightly browned and just cooked through.

Transfer the pork to a plate.

3. Cook the Vegetables

In the same skillet, add the sliced onion and bell peppers.

Add the minced garlic during the last minute of cooking and stir until fragrant.

4. Combine

Return the pork to the skillet.

Toss everything together and cook for 1–2 minutes until heated through.

5. Warm the Tortillas

Heat tortillas in a dry skillet for about 20–30 seconds per side, or wrap them in a damp paper towel and microwave for 30–45 seconds.

6. Assemble

Fill each warm tortilla with the pork fajita mixture.

Top with your favorite garnishes, such as fresh cilantro, sour cream, guacamole, shredded cheese, or pico de gallo.

Serve with fresh lime wedges for squeezing over the top.
